Crispy Parmesan Zucchini Rounds

A simple, crunchy, and cheesy way to enjoy zucchini—perfect as a snack, appetizer, or side dish.

Ingredients

2 medium zucchinis, sliced into ¼-inch thick rounds

½ cup freshly grated Parmesan cheese

½ cup breadcrumbs (panko preferred)

1 teaspoon dried oregano

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper, to taste

Olive oil spray or light drizzle

Fresh parsley, chopped (for garnish)

Method of Preparation

Preheat the oven – Set oven to 425°F (220°C). Line a baking sheet with parchment paper or grease lightly.
