Rhubarb and white chocolate muffins from a random ad that popped up on fb.
Delicious!!
Recipe as follows since a couple of folk asked
75g tinned rhubarb in syrup
60ml veg oil
75g natural yoghurt
1 egg
2 tbsp milk
100g caster sugar
150g SR flour
1/4 tsp bicarbonate of soda
White chocolate chips
Mix oil, yoghurt, egg and milk in a large bowl, then fold in the sugar, flour and bicarbonate of soda and mix well
Fold in the rhubarb and chocolate chips
Spoon mix into muffin cases to about 3/4 full
Air fry 160°C for 12-15 mins till golden brown.
Notes –
I mashed up the rhubarb with a fork before adding it. If I was making again I think I would add a bit more to the mix.
The recipe says to preheat airfryer but I didn’t. I found that 12mins was about right tho for some reason I had to put one batch in for a bit longer!
