Instructions:
Step 1: Prepare the Chicken

Season the chicken breasts with salt and pepper on both sides.

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken breasts and sear them for about 4-5 minutes per side, or until golden brown. The chicken does not need to be fully cooked at this stage as it will continue cooking in the braise.

Remove the chicken from the skillet and set it aside.
Step 2: Sauté the Onions and Garlic

In the same skillet, reduce the heat to medium and add the sliced onion. Sauté for 5-7 minutes, stirring occasionally, until the onion becomes soft and translucent.

Add the minced garlic and cook for another minute, until fragrant.
Step 3: Braise the Tomatoes

Pour in the can of diced tomatoes (with their juices) into the skillet. Stir to combine with the onions and garlic.

Season with salt and pepper to taste.

Return the seared chicken breasts to the skillet, nestling them into the tomato mixture. Bring to a simmer, then cover the skillet and cook for 20-25 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F or 74°C).
Step 4: Finish the Dish

Once the chicken is cooked, remove it from the skillet and place it on a serving plate. Spoon the braised tomatoes and onions over the chicken.

Tear the burrata into pieces and place it on top of the chicken and tomatoes. The warm chicken and tomatoes will melt the burrata, creating a creamy, indulgent sauce.

Garnish with fresh basil leaves for a pop of color and extra flavor.
Step 5: Serve

Serve the chicken with the braised tomatoes and burrata, and enjoy with your favorite side dishes, such as roasted vegetables, pasta, or crusty bread.
