Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking dish.
Mix wet ingredients: In a large bowl, whisk together melted butter, brown sugar, eggs, and vanilla.
Mix dry ingredients: In another bowl, whisk together flour, baking powder, and salt.
Combine: Add the dry ingredients to the wet ingredients, stirring just until blended.
Add coconut: Fold in shredded coconut.
Bake: Spread the batter evenly in the prepared dish. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
Cool & serve: Allow to cool completely before cutting into bars.
