Garlic Rosemary Roasted Pork Shoulder

Ingredients
6 pound bone in pork shoulder
4 tablespoons olive oil divided
1 tablespoon paprika
2 teaspoons kosher salt
1 teaspoon fresh ground pepper
6 cloves garlic minced divided
2 teaspoon fresh rosemary chopped
1 teaspoon fresh thyme
5 large carrots peeled cut into large chunks
3 pounds red potatoes cut in half or quartered
1 large onion cut into chunks
For the gravy
3 tablespoons flour
3 cups chicken stock
salt and pepper to taste
