High-Protein Broccoli Cheddar Soup

A Nourishing Twist on a Classic
This protein-packed version of broccoli cheddar soup combines wholesome vegetables, sharp cheddar, and creamy blended cottage cheese for a hearty bowl that’s both comforting and nutritious.

Ingredients
Butter – 1 tbsp (for sautéing vegetables)

Yellow onion – 1 large, diced

Carrots – 2 large, peeled and diced

Celery stalk – 1, diced

Garlic cloves – 2, minced

All-purpose flour – ¼ cup (use gluten-free if needed)

Smoked paprika – ½ tsp

Vegetable broth – 3 cups (a “not chicken” style broth works well)

Broccoli florets – 4 cups, chopped

1% Milk – 2 cups

Cheddar cheese – 4 oz (about 1 cup), shredded (sharp recommended)

Low-fat cottage cheese – 1 cup, blended until smooth
