Homemade Lemonies

👩‍🍳 Preparation
1. Preheat Oven
Preheat oven to 350°F (175°C).

Line a 9×9-inch baking dish with parchment paper or aluminum foil for easy removal.

2. Mix Dry Ingredients
In a large mixing bowl, whisk together:

Flour

Sugar

Lemon zest (1 tablespoon)

Baking powder

Salt

3. Add Wet Ingredients
Pour in:

Melted butter

Lemon juice (¼ cup)

Eggs

Vanilla extract (1 teaspoon)

Stir until just combined — do not overmix.

4. Bake
Pour batter evenly into the prepared baking dish.

Bake for 22–25 minutes, or until a toothpick inserted in the center comes out clean.

Let cool completely in the pan.

🍯 Make the Glaze
While the bars cool, whisk together in a bowl:

Powdered sugar (1¾ cups)

Lemon juice (2 tablespoons)

Lemon zest (1 teaspoon)

Vanilla extract (optional)

Whisk until smooth and pourable.

🍋 Finish and Serve
Pour the glaze evenly over the cooled lemonies.

Top with extra lemon zest for even more citrus punch.

Let set, then slice into bars and enjoy!

Tip: Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for a firmer texture.
