Southern Fried Salmon Patties

Instructions:
Prepare the salmon
Drain the salmon and remove any large bones if you prefer (the bones are soft and edible, so totally up to you). Flake the salmon with a fork in a medium bowl.

Mix it all up
Add chopped onion, bell pepper (if using), egg, cornmeal, flour, mayo or milk, Old Bay seasoning, and a few dashes of hot sauce if you like a little kick. Mix everything together until it holds its shape—adjust with a little more cornmeal or mayo if needed.
